I love summer! For me, it's all about being al fresco with friends — a crisp glass of wine and eating delicious food that's light and fresh but still big on flavor (and so easy to make!) — like these fish tacos. I've combined two of my favorite warm-weather dishes into one. Everybody's favorite fish taco gets dressed with the flavors of a Vietnamese summer roll — shredded carrots and lettuce, cilantro, lime and a spicy peanut sauce — for a true crowd-pleaser perfect for any summer backyard party.
Technique tip: Use 5-inch soft corn tortillas or bigger; any smaller and the filling will spill out.
