Shrimp burgers are a summertime staple on the North Carolina coast. Drive-ins and casual seafood spots serve small fried shrimp on a soft roll with tartar sauce and slaw. Even as a kid, I wondered why they didn't make the shrimp into a patty because they always fell off the bun. At Theodosia, we fixed that and added a lot of bright flavors in the process.

Technique tip: Make the patties in a large batch and freeze additional burgers for a later date. And heat your oven to 200 F to hold burgers if you are cooking a large batch.
