It might be illegal to have a summer barbecue without potato salad. If not illegal, then a darn shame! This is our absolute favorite recipe. It has just the right amount of creamy dressing with the added crunch of homemade fried shallots. It's a winner every time.
Technique tip: Salting the water while cooking the potatoes will help to improve their texture and flavor.
Swap option: As a time saver, you can always buy pre-fried onions rather than frying your own shallots.
Special equipment: A slotted spoon helps to remove the fried shallots from the oil.
