My research tells me that a crisp is a baked fruit dessert with a topping of butter, sugar, flour and spice. My favorite version is made with a generous layer of fresh New Jersey highbush blueberries beneath a thick topping. This superb dessert can be made as one large dish or many smaller ones for individual servings. Large or small, you'll know it's done when the fruit filling is bubbling in the center. Topped with vanilla ice cream or whipped cream, it's an easy and delicious crowd-pleaser.
Technique tip: When I bake fruit desserts, I line my rimmed baking sheet with parchment and then top it with a wire rack. Any fruit juices will drip onto the parchment and cleanup is easy and efficient.
